As the names suggested, round white potatoes have white flesh with smooth-tanned skin, whereas long white potatoes are oval shaped and have light-thin skin. Both of them have medium level of starch and creamy texture which allows them to stay in shape even after cooked.
- Yellow Potatoes
Yellow potatoes have creamy and dense texture. It is increasingly popular in the United States. People often think that yellow potatoes are buttered but the fact is, it’s the golden color that gives the illusion.
- Purple Potatoes
Purple potatoes have the uncommon flesh color which ranges from dark blue or lavender to white. In Indonesia, these purple potatoes are made into keripik (similar like chips) and bakpia (a traditional Indonesian snack). The color is really beautiful and if you want to keep the color while cooking, it is best to microwaving, steaming, or baking the potatoes.

Poutine is a Canadian-style potato fries. The idea is to mix fried potatoes with cheese. It is originated in Quebec and through the years, Canadians have made variations of their beloved fries. Usually, they top the fried-potato with gravy and cheese curds, but since cheese curds can be expensive, they modify it using mozzarella or cheddar cheese.
Poutine is known as the beloved potato dish for Canadians. With this Poutine recipe, you can learn how to make fried potatoes with new variation. Here is the recipe:
- 1kg large potatoes, cut into thick stick-like
- Vegetable oil
- 250ml beef stock
- 125ml chicken stock
- 50gr butter
- Half onion, slice thinly
- 2 crushed garlic cloves
- 35gr plain flour
- Grated cheese (according to your preferences)
- Put the sliced potato into a bowl and cover it with water. Refrigerate overnight.
- To make gravy, set together the stocks in a big jar. Heat the medium-large pan on medium heat and put the butter. Add onion and garlic. Stir occasionally and cook until the onion softened.
- Add in the flour and stir until the flour becomes brown. Add the stocks, reduce the heat, keeps stirring until it becomes thick. Strain through sieve and keep warm.
- Drain the potatoes and remove the excess water using paper towel.
- Using deep-fryer or large pan, heat the oil approximately 160ºC, fry the potatoes until light-golden brown. Drain on paper towel.
- For the second time, heat the oil 180ºC, drop the potatoes until become crisp and turned golden-brown. Drain on paper towel. Sprinkle pinch of salt.
- Place the fried potatoes in a bowl. Top it with grated cheese and add spoonful of warm gravy. Serve immediately.
You can also add an extra likes egg to meka fried potatoes and egg. It would be a good one.
